Is there a way to store electronic limit points in the grbl program for both directions of the X,Y, and Z axis's without using homing switches. It seems like that would be easy enough to do?

If I remember right the homing switch video discusses alternative 'homes'

I didn't look at that link because I'm on a pretty shoddy connection right now, but you really are going to need to home to establish limits. The machine has no idea where it's at if you don't register it against the homing switch. That is really any machine for that matter.
Grbl has soft limits you can set up, but it's all predicated on first running a homing cycle.
