A quick report back - SUCCESS! For reference: I had "Carvey" specified as my machine in Easel. Once I changed it to X-Carve, all the garbage code went away and the paths all made sense. Now one criticism I have of Easel is that their definition of a millimeter and my definition of a millimeter are two different things. I had a 4mm depth specified in a previous iteration of this project and the CNC went the full half inch! Oh well. Small potatoes all things considered. Thank you all for your responses, patience, and more importantly your working knowledge. Time for a beer!

Nice work. I think the depth problem is that Easel overwrote your steps/mm on your Z axis. Can you type $$ in the command line and see what the steps/mm setting is for Z? It sould be 80.

It looks to be within spec:
$102=80.000 (z, step/mm)
