It's been a quest for a great cuttable, removable with high enough tack mask for lettering (V carving). After 4 tries I finally found it.....Oramask 813 stencil film. Works great on lettering down to 5mm high, haven't tried smaller. It's semi-transparent blue which helps you see how well you squeegeed it before cutting. Can buy it on Amazon, not expensive. Had to share this.

Low adhesion and poor machine-ability, most noticed in " M,N,W,e" 5mm height and smaller with single flute V bits (any angle).

Just a note, to prevent paint from undermining the film (wicking up the grain), I first sand the surface all the way to 320 grit and spray a light film of clear enamel. After the paint in the V carved area dries after machining, film is the removed then I give it a light sand with 320, blow dust off and coat with whatever finish I'm using. This last sand removes any high ridges caused by Vcarving.

This is what I have found works best. For larger projects that I'm not making any money on I use masking tape and sand the work, but I use this for my tap handles that have fine lettering on them and it V-Carves awesome.
