Do you need to hone the machine I don’t have touch plates can you bypass all of that and run the m3 WTH old version In new version that make sense

Sure. turn off Homing Cycle Enable in grbl configuration to avoid homing the machine, the command is $22=0 The position of the axes when grbl is powered up is considered machine zero, normally that would be back right corner of the work area.
Having a touch plate is a different matter, that concerns finding the XYZ surfaces or edges of your work piece; perhaps you meant that you don't have homing switches, if so then turning off the Homing Cycle is right thing to do.
Any version of UGS will work fine without homing switches, and I suspect other gcode senders would as well.
Homing switches and their configuration is a grbl configuration matter, not a gcode sender matter.

So turning off honoring and then type in G92 x0y0z0 to sit the machine starting point Then do g90g0z5 to start the process
