which wood works best for 3d carving? any woods to avoid?

It depends on what you are trying to do. If you want fine detail then you want find grained woods like maple, or perhaps MDF or HDF. You can use softwood like fir or pine for large features like wooden spoons.
I would start by using MDF and then when you are sanctified with the results then decide what look and detail you want based on availability and cost. Hardwood is both expensive and hard to find.
One source not to overlook is used furniture which is generally made of hardwood like oak, cherry, maple or walnut. In selecting used furniture be sure to check for vernier over MDF. Even if it does have vernier, parts like legs and frames are often good hardwood. And you may even find a vernier table top good enough for your purposes.

Cherry cuts clean and holds detail better than any other if your doing 3-d with 1/16th / 1/32 tapered ballnoses.
